It is also considered to be more digestible than "common" or "modern" wheat. These properties may be due to the fact that the Kamut ® brand grain has never been subjected to hybridization, thus keeping intact the original nutritional characteristics. It is conceivable (???) that the Kamut ® brand grain is more tolerated than the modern wheat by those who suffer from hypersensitivity to wheat. It’s important to clarify, however, that the Kamut ® Khorasan wheat contains gluten and therefore is not suitable for coeliacs. Furthermore, the high percentage of lipids, in particular the most important mono and polyunsaturated fatty acids, makes it precious for nutrition and for its energetic power. Greater is also the content of minerals such as magnesium and zinc. What makes the KAMUT® brand grain particularly important for human nutrition is the high content of selenium. Selenium is a trace-element necessary for cell metabolism, its action reduces the formation of free radicals. As for other types of grain cholesterol is absent. All preparations made with KAMUT® wheat are more digestible.
