The Kamut ® branded khorasan wheat is an ancestor of the modern hard wheat, exclusively produced through organic farming. It’s rich in high quality proteins, vitamins and minerals and has a delicious flavor (taste). That’s why for many reasons is considered one of the most complete cereal from a nutritional standpoint. It is also considered to be more digestible than "common" or "modern" wheat. These properties may be due to the fact that the Kamut ® brand grain has never been subjected to hybridization, thus keeping intact the original nutritional characteristics. It is conceivable (???) that the Kamut ® brand grain is more tolerated than the modern wheat by those who suffer from hypersensitivity to wheat. It’s important to clarify, however, that the Kamut ® Khorasan wheat contains gluten and therefore is not suitable for coeliacs. It is a cereal with a protein content between 20% and 40% higher than the common grains. Furthermore, the high percentage of lipids, in particular the most important mono and polyunsaturated fatty acids, makes it precious for nutrition and for its energetic power. Greater is also the content of minerals such as magnesium and zinc. What makes the KAMUT® brand grain particularly important for human nutrition is the high content of selenium. Selenium is a trace-element necessary for cell metabolism, its action reduces the formation of free radicals. As for other types of grain cholesterol is absent. All preparations made with KAMUT® wheat are more digestible.
The buckwheat flour is obtained from buckwheat, Fagopyrum esculentum, a herbaceous plant belonging to the Polygonaceae family. The plant is native to Asia and was introduced in Europe by the Turks during the Middle Ages. The buckwheat plant can reach one meter in height and its grains have a triangular shape; From the nutritional picture of the buckwheat flour, the result is a high vitamins content: vitamins B, and in particular B1, B2, B3, B5 and B6; It also contains vitamin E. The buckwheat contains many proteins, so much to be compared to meat and soya and recommended in cases of physical deterioration. The buckwheat flour, due to its composition, helps to eliminate fluid excess from the body and has a revitalizing action on kidneys and heart, and thanks to the presence of a substance called rutin it prevents capillary fragility. This wheat is great for celiac disease sufferers, as it’s gluten free.
Spelt Flour, one of the oldest cereals known in history, is a resistant wheat of the Gramineae family growing on poor soils, even with harsh climate. The cultivation of barley has been reassessed in recent years, in particular so as to be of organic farms interest being a resistant plant that does not need chemical for its cultivation, and also for its excellent nutritional properties. Compared to other cereals, it has a lower calorie intake. Spelt flour is rich in protein, B vitamins and it’s important as it also contains methionine, an essential amino acid, involved in the synthesis of carnitine, cysteine and other phospholipids. The nutritional value of this meal is high. A nutrition based on products derived from barley is particularly suitable for those who cannot digest foods made from wheat, but not for people with celiac disease. Spelt flour has a high fiber content which, together with its remarkable ability to absorb water, makes it a satiating and slightly laxative food.
The hemp seed flour is all that remains of its seed after extracting the precious oil.
